Yes you can modify Bubble text to what ever you wish. There are multiple ways to do so.
-You can change the template text by modifying the frame action details ie. Action type, Object Type, and Object name
-You can click the ” Insert template text as user text” button to edit the Bubble text directly to what ever you desire including the use of bold, italics, font colors, font size, etc.
